If you try to eat healthy, I’m sure you also try to make healthy food more fun to eat. Here is a recipe that reimagines the traditional brownie recipe with a more health conscious ingredient.
This dessert is a delicious way to get more complex carbohydrates in your diet…with Sweet Potatoes!
Ingredients
- 1 1/2 c-sweet potatoes — chopped and cooked
- 1 cup peanut butter
- 1 cup flour
- 3/4 cup Maple syrup
- 1 teaspoon salt
- 1/2 cup cocoa powder
- 6 peices melted Dark Chocolate
- Cashews and/or vegan chocolate chips for topping (or you could mix them in)
- Vegan chocolate frosting or maple syrup (optional)
Directions
- Boil sweet potatoes until tender. Do not peel. Blend with a bit of the boiling water.
- Put it in a mixing bowl.
- Mix with rest of ingredients. It will be thick.
- Top with cashews and chocolate chips and a sprinkling of brown sugar.
- Bake at 350° for 35-45 minutes, or until fork comes out clean.
To make it extra special, serve with your favourite plant based ice cream, or coconut coolwhip!
