This is a great recipe to take on a picnic. You can change up the vegetables according to what you like, too. Feel free to mix it up!
Orzo Salad
- 2 pkgs of Orzo
- 1 red pepper, diced
- 1/2 cucumber diced
- 1 cup green or black olives, sliced
- 1 tomato, diced
- 1 cup fresh spinach, chopped
- 1 red onion, diced
- 1/2 block smoked tofu, diced
- Salt, pepper to taste
- Cook Orzo according to package directions
- Dice and chop all vegetables
- Drain pasta and put in large bowl
- Add all other ingredients
- Top with enough Liquid Gold Dressing (below) to coat and mix
Liquid Gold Dressing
Flax oil is one of the healthiest oils. The components in flax seeds/oil actually comprise our cell walls. You cannot cook with it though…it should only be used as a dressing.
- Mason jar filled a little more than 3/4 with flax oil, the rest lemon juice
- 2 teaspoons Ground Sumac
- Garlic, minced or 1 teaspoon garlic powder
- 1 tablespoon nutritional yeast
- 1 teaspoon salt
- 1 teaspoon dried basil or oregano or parsley
Put the lid on the jar tightly and shake until well combined.
