If you try to eat healthy, I’m sure you also try to make healthy food more fun to eat. Here is a recipe that reimagines the traditional brownie recipe with a more health conscious ingredient.

This dessert is a delicious way to get more complex carbohydrates in your diet…with Sweet Potatoes!

Ingredients

  • 1 1/2 c-sweet potatoes — chopped and cooked
  • 1 cup peanut butter
  • 1 cup flour
  • 3/4 cup Maple syrup
  • 1 teaspoon salt
  • 1/2 cup cocoa powder
  • 6 peices melted Dark Chocolate
  • Cashews and/or vegan chocolate chips for topping (or you could mix them in)
  • Vegan chocolate frosting or maple syrup (optional)

Directions

  1. Boil sweet potatoes until tender. Do not peel. Blend with a bit of the boiling water.
  2. Put it in a mixing bowl.
  3. Mix with rest of ingredients. It will be thick.
  4. Top with cashews and chocolate chips and a sprinkling of brown sugar.
  5. Bake at 350° for 35-45 minutes, or until fork comes out clean.

To make it extra special, serve with your favourite plant based ice cream, or coconut coolwhip!
